Southwest Steak Bowls

More rice! More bowl!

Apparently I've subconsciously had a bit of a theme with my dinner ideas lately. I found this idea somewhere on TikTok and didn't really use a recipe, just loosely following ideas from others. 

I used some kind of sirloin from Walmart (the cheapest steak I could find, I'm not afraid to admit it) and seasoned it with Kinders and my homemade taco seasoning. I followed my own steak recipe- hot pan, oil, sear for about 3 minutes per side* as these steaks were smaller. Then baste with butter and garlic. Typically, I'd add rosemary and finish for 5 minutes in a 400 degree oven, but that didn't seem necessary here. 

Next was making the decision of whether I wanted to dirty up my entire Instant Pot for the rice or just pop it in a saucepan (since I'd recently perfected that method of rice cooking). I decided on the latter and threw in a bit of taco seasoning while the rice was boiling- will this be a bad idea? Stay tuned.

*Back to the steak. I ended up only searing the second side for a minute or so since again, the steak was pretty thin. After a quick baste I placed it on a plate and covered it with aluminum foil to rest while I worked on the rest of the ingredients. 

A corn salsa would be nice with this dish, but instead of making one I just heated up a can of corn and a can of black beans. I always season these with salt & pepper or Kinders, and sometimes some butter in the corn if I'm feeling feisty. Tonight, I was. 

Now comes the real experiment- the sauce. I saw a chipotle drizzle/sauce/situation in one of the videos I used for inspo but didn't have all the ingredients to make it. But I wanted it- I love a sauce- so I took to the fridge and found a bottle of chipotle ranch and combined it with a bit of sour cream and plain Greek yogurt. I tasted it and it wasn't bad, so I added it to the menu.

The rice turned out fine as well, if you were wondering. I seasoned with salt & pepper and added a bit of butter then used it as a base for the steak bowl. I'll be honest, I wasn't hungry and wasn't particularly looking forward to dinner tonight, but it ended up being pretty damn good. 8/10. Btw- I took a picture of the final result, but it wasn't very aesthetically pleasing so I didn't bother to add it to this post. Oh well.
